Champagne and sparkling wines differ mainly in origin and production methods. Champagne is a sparkling wine from the Champagne region of France, made using Chardonnay, Pinot Noir, and Pinot Meunier grapes. It employs the traditional méthode champenoise, involving secondary fermentation in the bottle, creating its distinctive fine bubbles and complexity. Only sparkling wines from this region and made using méthode champenoise can be labelled "Champagne."
Sparkling wines can come from anywhere, like Prosecco from Italy or Cava from Spain, and use various production methods, including the Charmat method, where secondary fermentation happens in tanks. This often results in lighter, fruitier wines. This is not to say that non-Champagne sparkling wines are inferior, as the complexity and taste of some of these wines could easily rival Champagne.
