Appassimento is the process of drying grapes on racks to concentrate their flavours and sugars before making them into wine. This process is used commonly in Valpolicella for the making of Recioto and Amarone.
The Curatolo Arini Don Carlo Nero d'Avola Appassimento is made in Sicily from Nero d'Avola grapes. The wine is dark red and purple in colour. On the nose, violets, flowers, cherries, vanilla and spice are evident.
