Appassimento is the process of drying grapes on racks to concentrate their flavours and sugars before making them into wine. This process is used commonly in Valpolicella for the making of Recioto and Amarone.

On the nose, violets, flowers, cherries, vanilla and spice are evident. The Curatolo Arini Don Carlo Nero d'Avola Appassimento is a full-bodied wine with smooth tannins and an intense and long finish.
