Forget what you think you know about Amarone! Working only with indigenous varieties, the Ca' La Bionda Amarone della Valpolicella Classico is a classic blend of 70% Corvina, 20% Corvinone, 10% Rondinella and Molinara. Fruit is hand harvested from terraced vineyards, on average two weeks before many of their neighbouring producers, which ensures the fruit doesn’t become overripe during the raisining process. The must ferments happily with its native yeast in stainless steel at a low, ambient temperature. It then sees 36 months in 3000L used oak and another 8 months in bottle before release. The Castellanis have captured magic in a bottle, for all that Amarone is full and rich, there is freshness and tension to bring balance. An absolute stunner, brimming with bright red cherry fruit and a tinge of almond skin bitterness on the finish. Must drink more!
