Possibly Australia’s finest sparkling wine producer, Clover Hill vineyard is a dedicated sparkling wine estate in Pipers River, an area acknowledged as the premier source of sparkling wine in Australia. It is ideally suited for growing the “holy trinity”of sparkling varietals; chardonnay, pinot noir and pinot meunier. Tasmania’s cool to mild autumn temperatures make for a long ripening period, with an accumulation of intense fruit flavour balanced with fine acidity.
Since its premier vintage in 1991, Clover Hill has been crafted using méthode traditionnelle. The grapes are gently whole-bunch pressed, then fermented in individual batches. The wine is then matured on lees in bottle for a minimum of three years. At dosage, the winemakers use selected reserve wines aged in French oak foudres and barrels to capture the unique personality that is Clover Hill.
