The Saperavi grapes come from a vineyard planted in 1984, around the village of Kvareli in the heart of the Kakheti region, Georgia. These vines are rooted in the region’s characteristic black slate soil, which reaches a depth of 8 meters. The unique deep black slate soils of Kvareli make it challenging for the vines to access the necessary water, as the soil does not retain moisture. At the same time, these black slate soils impart a distinctive elegance, lightness, and minerality to the wine.
The grapes are harvested by hand in two different passages. Once delivered to the winery, they are sorted on a sorting band to remove any impurities. The whole bunches with stalks are then placed in 2,500L Qvevri amphorae, where natural yeast initiate fermentation. During fermentation, the cap is punched down four times a day at the beginning, gradually reducing to once a day as fermentation progresses. Once alcoholic fermentation is complete, the Qvevri is sealed, allowing the wine to undergo malolactic fermentation. The wine is left to mature in a mix of Qvevri & Burgundy barrels for 10 months before blending and bottling.
The Bedoba Reserve Saperavi embodies the essence of its terroir, showcasing the profound influence of Kvareli’s deep black slate soils and traditional Qvevri maturation. This wine reveals a rich and complex profile, interwoven with aromas of dark berries, wild alpine herbs, and delicate floral nuances, complemented by a whisper of cracked black pepper. On the palate, the Bedoba Reserve Saperavi strikes a perfect balance between power and elegance, with bold, spiced fruit flavors harmonizing with a refined minerality and silky texture. The gentle influence of low-toast oak adds layers of subtle complexity while remaining discreet in the background. The finish is long, structured, and sophisticated, with a lingering sense of purity.
