The Chapel Hill Chardonnay was produced from fruit grown in two of South Australia's most acclaimed Chardonnay regions: McLaren Vale and the Adelaide Hills. These neighbouring regions exemplify Chardonnay's invigorating flavour spectrum and both contribute distinctive varietal flavours that mingle effortlessly to culminate in a wine of delicious mouth feel and sublime texture. In this wine, McLaren Vale's fruit drive is given additional finesse and structure by the Chardonnay from the Adelaide Hills. Following the 2010 vintage the winery believed that the Chapel Hill Unwooded Chardonnay style had been fully explored. Chardonnay's varietal structure renders it ideally suited to weaving in complexity, whilst still maintaining fruit purity and a sense of place. With the desire to achieve the next level of complexity and improvement it was evident that oak would be subtly introduced to the wine. In 2011, which ironically would have been the 21st year of the Chapel Hill Unwooded Chardonnay, it was decided that a component of the wine would be barrel fermented in three, four and five year old French oak hogsheads.
